this is a simple, healthy version of sweet and sour fish 糖醋魚. here, we just lightly pan fry the fish, instead of deep frying. we are using all parts of the fish because fried bones and head are also yummy! but of course, you can just use fillets.
fish 1 lb
salt 1 tsp
shaoxing wine 1 tsp
cornflour 1 tbsp
tomato 1 medium
ketchup 3 tbsp
water 3 tbsp
- cut the fish into small pieces
- marinate the fish with salt, shaoxing wine, and cornflour for at least 30 min
- chop the tomato into pieces
- in a hot pan over medium heat, add oil and pan fry the fish pieces until thoroughly cooked, about 5 min and set aside
- using the same pan with the oil, stir fry the tomatoes for a few min to soften
- add the ketchup and water to the pan, cook for a couple of min to slightly thicken as a sauce
- toss the fish pieces back into the pan, turn off the heat, and gently mix well with the sauce
