we had a special mother’s day dinner in the yuen long district (#9). our lovely guest loves chicken hotpot, and there’s one place in yuen long, called 八麵棧 (no english name), that serves up spicy sichuan style chicken hotpot.

chicken hotpot has been growing in popularity within these past few years in hong kong. it is spicy, numbing, and addictive. once the chicken is done, the spicy broth is used for hotpot, which is super tasty because that broth has absorbed all the flavors of the chillies and numbing peppercorns.
