grilled corn vegetable salad

this is an extremely versatile salad, with corn as the star ingredient. the sweetness of corn goes with just about anything. we packed this salad with some hearty proteins, like beans and nuts, to make it nutritionally dense yet still sensible. you can pick any beans and nuts that you like, such as kidney beans, garbanzo beans, walnuts, almonds…

we grilled our corn and bell pepper to give the salad an extra layer of smokiness.

whole corn 3 cobs
red bell pepper 1 large
tomato 1 medium
black beans 1 can
cashews 1 cup
cilantro chopped 1/2 cup
olive oil 3 tbsp
juice of 1/2 lemon
salt 1 tsp

  • grill the corn and red bell pepper to get a nice even char
  • using a knife, cut vertically down the cob to remove the kernels
  • chop the red bell pepper and the tomato similar in size to the corn kernels
  • combine all of the veggies in a mixing bowl, then add the black beans, cashews, cilantro, olive oil, lemon juice, and salt
  • mix well, salt and pepper to taste if necessary

lightly roast the corn and red bell pepper

cut the kernels off the corn cob and dice the veggies

a high quality olive oil makes all the difference in a salad
