this is an excellent hangover food. it’s salty and loaded with carbs… perfect to soak up all that booze. to make a great fried rice, you have to use overnight rice. the rice needs to be dry, this helps each individual grain separate easily while cooking. freshly cooked rice has too much moisture, the end result will be mushy fried rice. the heat needs to be high to “sear” each grain of rice. again, using overnight rice helps this process. either a wok or a nonstick pan can be used.
leftover white rice 2 cups (480 g)
chicken 1 thigh meat, diced
salted fish 2 tbsp finely diced
iceberg lettuce thin chopped 1 cup (240 g)
oil 1/4 cup (60 g)
soy sauce 1 tbsp
- in a wok, add oil and cook the chicken with a little bit of salt, set aside
- turn heat to high, add the 1/4 cup of oil, let the wok heat up until the oil begins to smoke
- toss in the rice and salted fish, stir-fry thoroughly for about 4-5 minutes
- add the cooked chicken and soy sauce, toss evenly
- add the lettuce and turn off the heat, toss evenly again
This is my favorite fried rice. Every time I order it in a restaurant I’m told that gweilo don’t like this and that I should consider ordering something else. Really.
