what’s not to love about avocados. it’s rich and creamy, and it works well in both savory and sweet dishes. some people actually claim that avocado is the perfect food. it’s packed with healthy nutrients and essential fatty acids. plus, it makes a damn good dip.

avocado 2
plum tomato 1 diced and seeded
shallot 1 finely diced
garlic 1 clove finely diced
cilantro 1 bunch finely chopped
juice of 1 lime
olive oil 1 tbsp
salt 1 tsp
cumin 1/2 tsp

  • mash avocados in a bowl. an easy way to do this is to make crisscross cuts on the halved avocados and use a spoon to scoop out the fruit from the skin
  • after dicing and chopping all of the ingredients above, add everything to the bowl of avocados
  • salt and pepper to taste

don’t overdo it with the cumin because it can overwhelm the other flavors.

to make your own chips, use a mandoline to slice the potatoes. soak them in water for 15 minutes and then pat them dry with a towel. get a pot of peanut oil nice and hot, 375 F (190 C). fry until golden brown, in small batches.
