vanilla cupcakes

cupcakes – ideal for picnics and parties. there are so many things you can do with a cupcake. it’s important to start with the basics, and from there, you can expand your creative ideas.

serves 24

cakes

unsalted butter, room temperature 3/4 cup (180 g)
sugar 1 1/2 cups (360 g)
large eggs 5
cake flour 2 1/2 cups (600 g)
baking powder 2 tsp
salt 1 pinch
milk 1 cup (240 g)
vanilla extract 1 tablespoon

  • preheat oven 350 F (175 C)
  • beat the butter and sugar until well combined
  • add the eggs one at a time, beat well continuously
  • sift the the flour, baking powder and salt into the butter mixture, mix well
  • add the milk and vanilla, mix until smooth
  • spoon the batter into the molds lined with cupcake liners until 3/4 full
  • bake for 20 min
  • use a toothpick to test. it should come out clean when the cakes are done
  • cool the cupcakes in the tins

frosting

unsalted butter, room temperature 1/2 cup (120 g)
icing sugar 3 cups (720 g)
milk 6 tbsp
vanilla extract 1 tsp

  • beat the butter until fluffy
  • add half of the icing sugar, beat until fluffy
  • pour in the milk and vanilla
  • gradually add the remaining icing sugar, beat until the frosting is fluffy
  • pipe or spread the frosting on the cupcakes
