cupcakes – ideal for picnics and parties. there are so many things you can do with a cupcake. it’s important to start with the basics, and from there, you can expand your creative ideas.
serves 24
cakes
unsalted butter, room temperature 3/4 cup (180 g)
sugar 1 1/2 cups (360 g)
large eggs 5
cake flour 2 1/2 cups (600 g)
baking powder 2 tsp
salt 1 pinch
milk 1 cup (240 g)
vanilla extract 1 tablespoon
- preheat oven 350 F (175 C)
- beat the butter and sugar until well combined
- add the eggs one at a time, beat well continuously
- sift the the flour, baking powder and salt into the butter mixture, mix well
- add the milk and vanilla, mix until smooth
- spoon the batter into the molds lined with cupcake liners until 3/4 full
- bake for 20 min
- use a toothpick to test. it should come out clean when the cakes are done
- cool the cupcakes in the tins
frosting
unsalted butter, room temperature 1/2 cup (120 g)
icing sugar 3 cups (720 g)
milk 6 tbsp
vanilla extract 1 tsp
- beat the butter until fluffy
- add half of the icing sugar, beat until fluffy
- pour in the milk and vanilla
- gradually add the remaining icing sugar, beat until the frosting is fluffy
- pipe or spread the frosting on the cupcakes

spoon the batter into the tins lined with cupcake liners
